docs(workshop): archive Module 06b and simplify workshop flow

Summary

• remove Module 06b from active learner/instructor navigation, timing, resources, diagrams, and handoffs while preserving clearly warned unlisted archive routes
• route Module 06 directly to Module 07 and standardize the active title as Module 06
• reorder ClickStack so learners start the collector before enabling Managed ClickStack; configure/source the env first and rebuild frontend telemetry
• replace dense architecture/data-flow diagrams with a clear location overview and six-step trip path through Postgres, ClickPipes, default.realtime_trips, the materialized view, and the app
• add policy checks preventing archived content and stale collector commands from returning

Verification

• workshops/build_workshop/scripts/check-docs.sh
• npm run types:check
• production next build --webpack (100 static pages)
• browser QA at 836px content width: no diagram overlaps or console errors
• learner/instructor navigation omits 06b; both archive routes return 200 with warnings and Module 07 links
• independent adversarial review: clean

Documentation

• workshop README and overview now describe the simplified component and trip flows
• maintainer app/observability docs match the collector-first --build sequence
• archived learner/instructor pages remain available only as historical references
