feat(workshop): add Polymarket analytics track

Summary

• add a dedicated Polymarket learner and instructor track alongside AI SRE
• stream public Gamma, CLOB WebSocket/REST, and Data API data into ClickHouse Cloud
• add resilient reconciliation, fixture fallback, one-minute materialized aggregates, and Cloud Dashboard exercises
• add Linux, Windows/WSL, SQL drift, real ClickHouse, route-gating, and deployment checks

Verification

• 49 collector tests passed; 1 explicit integration-phase skip
• ClickHouse 26.3 schema, storage adapter, materialized view, and learner SQL integration passed
• documentation policy and canonical SQL checks passed
• TypeScript check and production build passed
• desktop/mobile browser QA passed with no application console errors
• production-mode rehearsal route returns 404; learner, instructor, and AI SRE routes return 200

Deployment

Merge to dev-build-workshop-v1 deploys only to dev-workshop.demohouse.cloud. Production promotion is intentionally deferred pending rehearsal.
