docs(ai): Retarget AI dashboards and conversations links#17477

The /insights/ai/agents/, /insights/ai/mcp/, and /insights/conversations/ destinations no longer exist. Update the outbound links across AI Agents platform docs, the MCP Dashboard page, and the Conversations page so readers land in the right place: the filtered prebuilt dashboards for Agents and MCP, and /explore/conversations for Conversations. Link text updated from "Insights" to "Dashboard" where that's now the destination; Conversations link text is unchanged since it moves under Explore rather than Dashboards.
