Remove remaining Mint names and wording after retirement

Follow-up to #1029, which retires Mint. Docs that give readers wrong output or refused commands are fixed in #1029 itself; this issue covers what remains.

Code, rename only:

• MintResourceServer in registry-evidence-oid4vci (authorizer.rs, service.rs, tests/offer_authorization.rs); it works with any issuer
• Test the_offer_boundary_shares_no_code_path_with_the_mint_client_identity
• mint.example.org hosts in the oid4vci config.rs and service.rs fixtures, tests/inji_interoperability.rs and tests/state_machine_recovery.rs, and the "synthetic Evidence and Mint support listener" comment
